Hi from Blyth in Northumberland , UK . Looking for my first bonneville and trying to find/look up as much info as possible , the cash is burning a hole in my pocket can wait

Welcome! If you were in the Chicago area, I'd offer some help finding a good used bike! I don't know enough about your area to make any suggestions. I love my 2008 Bonneville Black, the last year the Bonneville's came with carbs. I owned a 2012 Thruxton as well, and I liked the EFI as well, so I think any of the 865cc air-cooled models should be a good buy. They are generally very solid, reliable machines if you take care of them, and hold their value. Good luck!
